NON-HYDROGENATED fats is of growing importance to the bakery and snacks industry as food developer are tasked to make healthier products that have reduced or completely eliminate trans fats Bakeries and specialty ice cream shops will welcome an all-around topping base launched worldwide this spring. Aerion DP 90 from the world's largest producer of powdered toppings, DMV International in the Netherlands, is a topping that is mainly applied in instant aerated desserts for the consumer market. The topping base has excellent whipping properties, smooth texture and superb taste. It is also non-HVO (hydrogenated vegetable oils), so it has no hydrogenated fats associated with higher levels of trans fats are found in this product. Because of its all-round character, DP 90 can also be used in artisanal ice creams and bakeries use it for fillings, bavaroise, mousses and decoration cream. It can be used both in an "acid" environment, e.g. in the production of quark mousse, and in a "neutral" environment, e.g. in the preparation of chocolate mousse. Expectations for this completely new product of vegetable origin are high. DMV says the first companies to try it out are very pleased with the results. 揑nspired customers tell me they think the new product is great, as it supports less functional, cheaper ingredients by improving taste and creaminess. In France it is being used in artisanal ice creams, in Greece more in retail bakery mixes and in the UK it is replacing hydrogenated fats in various products,?says Jos Bevers, senior market development manager at DMV International. “DP 90's wide range of functionalities is definitely its greatest advantage.? An important selling point in a number of markets is that it is free of both animal ingredients and GMOs (genetically modified organisms). In the long run, DMV International sees consumers taking more responsibility for their eating habits and factoring health aspects more heavily into their buying decisions. “DP 90 is the ideal solution for non hydrogenated vegetable fat based instant aerated desserts,?says Bevers. “This is why it fits in extremely well with the current health trend and the emphasis in certain countries on replacing hydrogenated fats with non hydrogenated fats. You could certainly call this a vegetable alternative for dairy cream with an honest, full taste and a creamy impression. No compromise on taste and functionality was our goal, and we achieved this with excellent results.? DMV has been working on the development of this new ingredient with a whole team of specialists over a period of 18 months. It was presented last November at the trade fair Fi Europe in London. “The initial reactions are enthusiastic, not only because it's non-HVO but primarily because of its high performance and all-round character,?Bevers emphasizes. Customers coordinate closely on Aerion DP 90's use with Innovium, DMV International's Innovation Centre in Wageningen, the Netherlands. It is DMV's goal to develop new products as much as possible in close cooperation with customers.
